Ingredients

  • 6 slices bacon
  • 1/4 cup onion, chopped
  • 3 medium potatoes, diced
  • 1 cup water
  • salt and pepper to taste
  • 2 cups tomato juice
  • 1 12 oz can corn kernels
  • 1/2 cup milk
  • 1/4 cup flour

Instructions

  1. Cook bacon in a large pot until crispy, then remove and set aside. Add chopped onion to the bacon drippings and cook until tender, about 3 minutes.
  2. Add diced potatoes, water, salt, and pepper to the pot. Cover and cook for about 20 minutes until potatoes are tender.
  3. Stir in tomato juice and corn kernels. Bring to a simmer.
  4. In a small bowl, mix milk and flour until smooth. Add this mixture to the soup and stir well.
  5. Cook for about 5 minutes or until the soup has thickened. Serve hot, garnished with crumbled bacon if desired.
