Ingredients

  • 4 lb ripe tomatoes
  • 4 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg

Instructions

  1. Stew the tomatoes in their own juice until soft.
  2. Run the stewed tomatoes through a sieve to remove skins and seeds. Cool.
  3. In a bowl, combine the cooled tomato puree with beaten eggs, milk, sugar, salt, and nutmeg.
  4. Mix well until smooth.
  5. Pour the mixture into buttered custard cups.
  6. Bake until set and lightly browned on top.
