Ingredients

  • 1/2 gallon ripe tomatoes
  • 6 green peppers
  • 1 large white onion
  • small red peppers, as many as you like, chopped
  • 1 Tbsp. cayenne pepper
  • 1 Tbsp. salt
  • 1 tsp. ground cloves
  • 1 tsp. ground cinnamon
  • 1 tsp. dry mustard
  • 1 1/2 c. white vinegar

Instructions

  1. Peel and chop the ripe tomatoes.
  2. Chop the green peppers, red peppers, and white onion.
  3. Mix all chopped vegetables in a heavy vessel.
  4. Add remaining ingredients and bring to a boil.
  5. Reduce heat and simmer slowly for at least 2 hours or until desired thickness, stirring occasionally and watching closely to prevent burning.
  6. Pack the hot mixture into pint jars and seal.
