A vibrant Italian-inspired tomato dish featuring sautéed tomatoes topped with toasted bread crumbs and fresh herbs, perfect as an appetizer or light side.

Ingredients

  • 2 whole large tomatoes
  • 1 Tbsp chopped parsley
  • 2 Tbsp bread crumbs
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1 clove minced garlic
  • 2 tsp basil
  • pepper to taste

Instructions

  1. Cut tomatoes in half and remove seeds.
  2. Heat olive oil in a skillet and sauté tomatoes (cut side down) for three minutes.
  3. Add minced garlic and sauté until tomatoes are tender.
  4. Turn tomatoes over and sprinkle with salt and pepper.
  5. Place tomatoes on a serving plate.
  6. Toast bread crumbs until golden in a skillet and sprinkle over tomatoes.
