Ingredients

  • 24 cherry tomatoes
  • 3/4 cup finely chopped zucchini
  • 1/2 cup low-fat cottage cheese
  • 1 teaspoon snipped chives
  • 3/4 teaspoon garlic salt

Instructions

  1. Cut a slice off the bottom of each cherry tomato so they will sit flat.
  2. Cut a thin slice from the top of each cherry tomato.
  3. Using a small melon baller or spoon, carefully scoop out the centers of the tomatoes.
  4. Sprinkle the inside of each tomato lightly with salt.
  5. Combine the finely chopped zucchini, low-fat cottage cheese, snipped chives, and garlic salt in a bowl.
  6. Fill each tomato with about one rounded teaspoon of the zucchini mixture.
  7. Garnish each filled tomato with additional chives.
