Saffron Rice Supreme

A fragrant saffron-infused rice dish enriched with toasted almonds, spices, and raisins, perfect for elegant dinners or special occasions needing bold flavors.

Ingredients

  • 1/3 c. almonds, blanched
  • 1 1/2 tsp. coriander (whole)
  • 1 1/2 tsp. cumin (whole)
  • 1/2 c. yellow raisins
  • 1/2 tsp. saffron threads
  • 1/2 c. butter
  • 4 c. cooked rice
  • salt and pepper to taste

Instructions

  1. Split each almond into 2 halves.
  2. Using a mortar and pestle, crush the cumin, coriander, and saffron together.
  3. Soak the raisins in hot water for a few minutes and drain.
  4. Saute the almonds, crushed spices, and raisins in butter for a few minutes.
  5. Add the cooked rice to the pan and toss to color the rice and coat each grain with butter.
  6. Add salt and freshly ground pepper to taste.
  7. Serve hot.
