Ingredients

  • 6 large ripe tomatoes
  • 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
  • 3 tablespoons olive oil
  • 3/4 cup finely chopped onion
  • 1/2 cup Italian bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cut a 1/2-inch slice from the top of each tomato and carefully scoop out the pulp with a melon baller.
  2. Chop the pulp and drain it; set aside.
  3. Place the tomato shells upside-down on paper towels to drain.
  4. In a skillet, heat 3 tablespoons of olive oil over medium heat.
  5. Add the chopped onion and sauté until translucent.
  6. Mix in the drained chopped pulp and cooked spinach.
  7. Stir in the bread crumbs, salt, and pepper.
  8. Stuff the tomato shells with the spinach mixture.
  9. Optional: Bake at 375°F (190°C) for 15-20 minutes until heated through.
