- Cut a 1/2-inch slice from the top of each tomato and carefully scoop out the pulp with a melon baller.
- Chop the pulp and drain it; set aside.
- Place the tomato shells upside-down on paper towels to drain.
- In a skillet, heat 3 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Mix in the drained chopped pulp and cooked spinach.
- Stir in the bread crumbs, salt, and pepper.
- Stuff the tomato shells with the spinach mixture.
- Optional: Bake at 375°F (190°C) for 15-20 minutes until heated through.
