Ingredients

  • 1 1/2 to 2 lb. ham hocks

  • 1 large onion
  • 2 Tbsp. butter

Instructions

  1. Wash and look through the dried navy beans.
  2. Combine the beans and water in a large Dutch oven, bring to a boil, cover, and remove from heat. Let stand for one hour.
  3. Add ham hocks to the pot, bring to a boil, then reduce heat, cover, and simmer for 3 hours.
  4. Remove the meat from the bones, chop into pieces, and add back to the soup.
  5. Stir in salt and pepper to taste.
  6. Saute chopped onion in butter and add to the soup, stirring well.
  7. Serve the hot soup with cornbread or crackers.
