Ingredients

  • 1 1/2 cups shredded cooked chicken
  • 2 3/4 cups meatless spaghetti sauce
  • 4 ounces chopped green chilies, drained
  • 2 1/4 ounces sliced ripe olives, drained
  • 5 flour tortillas, 10 inches diameter
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 10-inch by 1 1/2-inch pie plate.
  3. Mix the shredded cooked chicken, spaghetti sauce, chopped green chilies, and sliced ripe olives together.
  4. Place 2 tortillas in the prepared pie plate.
  5. Top with 3/4 cup of the chicken mixture, 1/4 cup of shredded Monterey Jack cheese, and another tortilla.
  6. Repeat the layers with 3/4 cup of chicken mixture, 1/4 cup of cheese, and a tortilla two more times.
  7. Finish by topping with the remaining chicken mixture.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove foil, sprinkle with the remaining cheese, and bake uncovered for about 15 minutes or until the center is hot.
