Ingredients

  • 1 cup finely chopped cooked chicken breast
  • 1/2 cup chopped peeled jicama
  • 1 (4 oz) can chopped green chiles, drained
  • 1/2 cup shredded Cheddar cheese
  • 3 tablespoons reduced-calorie mayonnaise
  • 12 corn tortillas
  • Chili sauce (amount as needed)
  • 1/2 large jar grape jelly
  • Juice of 1 lemon
  • 2 pounds ground chuck
  • 1 slightly beaten egg
  • 1 large grated onion
  • Salt to taste

Instructions

  1. Mix the cooked chicken, chopped jicama, drained green chiles, shredded Cheddar cheese, mayonnaise, lemon juice, and salt to taste.
  2. Shape the mixture into 50 or 60 small meat balls.
  3. Place 10 meat balls on a glass dish measuring about 8 or 9 inches.
  4. Cook in the microwave oven for 2 minutes and drain.
