Ingredients
- 1 cup finely chopped cooked chicken breast
- 1/2 cup chopped peeled jicama ⓘ
- 1 (4 oz) can chopped green chiles, drained ⓘ
- 1/2 cup shredded Cheddar cheese ⓘ
- 3 tablespoons reduced-calorie mayonnaise ⓘ
- 12 corn tortillas ⓘ
- Chili sauce (amount as needed) ⓘ
- 1/2 large jar grape jelly ⓘ
- Juice of 1 lemon ⓘ
- 2 pounds ground chuck
- 1 slightly beaten egg ⓘ
- 1 large grated onion ⓘ
- Salt to taste ⓘ
Instructions
- Mix the cooked chicken, chopped jicama, drained green chiles, shredded Cheddar cheese, mayonnaise, lemon juice, and salt to taste.
- Shape the mixture into 50 or 60 small meat balls.
- Place 10 meat balls on a glass dish measuring about 8 or 9 inches.
- Cook in the microwave oven for 2 minutes and drain.
