Ingredients

  • 1/2 cup chopped toasted almonds
  • 4 tablespoons melted oleo
  • 1 1/3 cups vanilla wafer crumbs
  • 1 teaspoon almond flavoring
  • 3 pints vanilla ice cream, softened
  • 12 ounces apricot preserves

Instructions

  1. Combine chopped toasted almonds, melted oleo, vanilla wafer crumbs, and almond flavoring; mix well.
  2. Sprinkle one-third of the crumbs over the bottom of an 8 1/2 x 11-inch pan lined with foil.
  3. Spoon half of the softened vanilla ice cream over the crumbs.
  4. Drizzle with apricot preserves.
  5. Sprinkle with another third of the crumbs.
  6. Repeat layers: ice cream, preserves, crumbs.
  7. Freeze until firm.
  8. Cut into squares and garnish with whipped cream if desired.
