Ingredients

  • 1 (18.25 oz.) package spice cake mix
  • 1 cup buttermilk
  • 1/3 cup sweetened applesauce
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1/4 teaspoon ground cinnamon
  • 1 cup blackberry jam
  • Quick Caramel Frosting

Instructions

  1. Beat the first 6 ingredients at low speed with an electric mixer for 1 minute.
  2. Scrape down sides of the bowl, then beat at medium speed for 2 more minutes until well blended, stopping to scrape down sides if needed.
  3. Pour batter evenly into 3 greased and floured 9-inch round cake pans.
  4. Bake at 350°F for 20 to 23 minutes or until cakes are light brown and spring back when lightly pressed with your fingers.
  5. Cool in pans on wire racks for 10 minutes.
  6. Remove cakes from pans and cool completely on wire racks.
