Ingredients

  • 1/4 cup shredded coconut
  • 2 fresh kiwi fruit
  • 1 (8.5 oz) can pineapple chunks, drained
  • 1 (11 oz) can mandarin oranges, drained
  • 4 cups low-fat vanilla yogurt
  • 2 cups low-fat granola

Instructions

  1. Preheat oven to 350°F.
  2. Spread shredded coconut in a single layer on an ungreased sheet pan and toast for 5 to 10 minutes until light brown and crisp.
  3. Peel and slice the kiwi fruit.
  4. In a small bowl, stir the kiwi slices with the pineapple chunks and mandarin oranges.
  5. Spoon 1/3 cup of vanilla yogurt into each of four parfait glasses.
  6. Sprinkle 1/4 cup of granola over the yogurt in each glass.
  7. Add 2 tablespoons of the mixed fruit to each glass.
  8. Repeat the layers once more and top with toasted coconut.
