- Preheat oven to 350°F.
- Spread shredded coconut in a single layer on an ungreased sheet pan and toast for 5 to 10 minutes until light brown and crisp.
- Peel and slice the kiwi fruit.
- In a small bowl, stir the kiwi slices with the pineapple chunks and mandarin oranges.
- Spoon 1/3 cup of vanilla yogurt into each of four parfait glasses.
- Sprinkle 1/4 cup of granola over the yogurt in each glass.
- Add 2 tablespoons of the mixed fruit to each glass.
- Repeat the layers once more and top with toasted coconut.
