Ingredients

  • 2 1/4 cups flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/3 cup plus 2 teaspoons oleo
  • 1 1/2 cups crushed pineapple (no sugar added)
  • 1 teaspoon vanilla
  • 1/2 teaspoon coconut flavoring

Instructions

  1. Preheat oven to 375°F.
  2. In a medium mixing bowl, combine flour, sugar, and baking powder.
  3. Cut in oleo with a pastry blender or two knives until mixture resembles coarse meal.
  4. Add crushed pineapple, vanilla, and coconut flavoring; stir just until the mixture forms a sticky dough and leaves the sides of the bowl.
  5. Spray 12 muffin pan cups (2 1/2 inches) with nonstick cooking spray.
  6. Spoon an equal amount of the pineapple mixture into each muffin cup.
  7. Bake until muffins are golden brown, about 30 to 35 minutes.
  8. Remove muffins from the oven and transfer to a wire rack to cool.
  9. Serve immediately or wrap individually and freeze until ready to use.
