- In a medium mixing bowl, combine flour, sugar, and baking powder.
- Cut in oleo with a pastry blender or two knives until mixture resembles coarse meal.
- Add crushed pineapple, vanilla, and coconut flavoring; stir just until the mixture forms a sticky dough and leaves the sides of the bowl.
- Spray 12 muffin pan cups (2 1/2 inches) with nonstick cooking spray.
- Spoon an equal amount of the pineapple mixture into each muffin cup.
- Bake until muffins are golden brown, about 30 to 35 minutes.
- Remove muffins from the oven and transfer to a wire rack to cool.
- Serve immediately or wrap individually and freeze until ready to use.
