Ingredients

  • 20 ounces pineapple chunks, drained and reserving 5 tablespoons juice
  • 32 ounces vanilla yogurt
  • 1 cup blueberries
  • 12 cup shredded coconut, toasted
  • 2 tablespoons honey

Instructions

  1. In a bowl combine pineapple juice and yogurt.
  2. In a separate bowl, combine pineapple chunks, remaining juice, blueberries, coconut, and honey.
  3. Divide yogurt mixture evenly among 6 serving dishes.
  4. Top each with coconut.
  5. Chill 1 hour.
