Ingredients

  • 6 baked potatoes
  • 2 tsp lemon juice
  • 1 (7 oz) can tuna
  • grated cheese
  • 2 Tbsp butter or margarine

Instructions

  1. Cut the baked potatoes in halves lengthwise.
  2. Scoop out the potato centers into a mixing bowl.
  3. Mash the potato centers with butter or margarine and enough milk to make the mixture fluffy.
  4. Season the mashed potatoes with salt, pepper, and lemon juice.
  5. Blend the tuna with the potato mixture.
  6. Fill the potato shells with the tuna and potato mixture.
  7. Sprinkle grated cheese over the filled potatoes.
  8. Bake at 400°F for 15 minutes until cheese is melted and bubbly.
