Ingredients

  • 2 cups cooked rice
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Colby cheese
  • 1 (6 1/2 oz) can tuna, drained
  • 1/2 can chopped black olives
  • lemon (a little)

Instructions

  1. Beat eggs and mix them with drained tuna, chopped black olives, lemon juice, seasoned salt, pepper, and parsley.
  2. Add cooked rice and shredded Cheddar and Colby cheeses to the mixture and combine well.
  3. Scoop the mixture into muffin tins and bake at 350°F (175°C) for 15 to 20 minutes until golden and heated through.
