Tuna Salad Stack Up

Ingredients

  • 1 c. salad dressing (regular or light)
  • 1/2 c. sour cream
  • 1/4 c. chopped dill pickles
  • 1/4 c. chopped onion
  • 2 Tbsp. sweet milk
  • 1/2 tsp. dry mustard
  • 3 c. cooked rice, chilled
  • 2 c. cooked green peas
  • 1/4 c. finely chopped parsley
  • 3 c. shredded lettuce
  • 2 c. chopped tomatoes
  • 2 (8 1/2 oz.) cans tuna, drained and flaked

Instructions

  1. Combine salad dressing, sour cream, pickles, onions, milk, and mustard.
  2. Mix well.
  3. Combine rice, peas, and parsley.
  4. In a 3 1/2-quart salad bowl, layer lettuce, rice mixture, tomatoes, tuna and cucumbers.
  5. Top with dressing.
  6. Cover; chill.
  7. Makes 10 to 12 servings.
