Ingredients

  • 1/3 cup unsalted butter, at room temperature
  • 1 clove garlic, crushed
  • 1 tsp tarragon, finely chopped
  • 1 tsp finely grated lemon zest
  • 3 tsp lemon juice
  • 2 x 6 oz turkey breasts
  • 1/3 cup all-purpose flour
  • 1 None large egg, lightly whisked
  • 1.5 oz breadcrumbs
  • None None Vegetable oil, to shallow-fry
  • None None Steamed broccoli, to serve
  • None None Steamed beans, to serve
  • None None Lemon wedges, to serve

Instructions

  1. Combine butter, garlic, tarragon, zest and juice in a bowl. Shape butter mixture into a log. Cover in plastic wrap and twist ends to enclose. Freeze for 20 minutes or until firm.
  2. Using a small sharp knife, cut horizontally into short side of each turkey breast to create a pocket. Slice butter log into 4 equal slices; place 2 slices in each pocket. Secure with a toothpick. Place flour, egg and breadcrumbs in 3 separate shallow bowls. Dip turkey into flour to coat, then egg, then breadcrumbs.
  3. Preheat oven to 400°F. Heat oil in a large heavy-based saucepan over moderate heat. Shallow-fry turkey for 2 minutes each side or until golden. Using a slotted spoon, transfer to a baking sheet. Bake for 15 minutes or until cooked. Serve turkey with broccoli, beans and lemon wedges.
