Ingredients

  • 2 lb ground turkey
  • 1/4 tsp coarse black pepper
  • 1/2 tsp coarse red pepper
  • 2 Tbsp mustard seed
  • 2 Tbsp caraway seed
  • 2 Tbsp Tender Quick salt
  • 1/2 tsp onion salt
  • 1 Tbsp liquid smoke

Instructions

  1. Mix all ingredients well together.
  2. Divide the mixture into two rolls.
  3. Wrap each roll tightly in foil and chill in the refrigerator for 24 hours.
  4. Preheat oven to 350°F (175°C).
  5. Place the foil-wrapped rolls on a cookie sheet.
  6. Bake for 1 hour.
  7. Remove from oven and cool in their juices.
  8. Re-wrap in fresh foil or place in a freezer bag.
  9. Refrigerate or freeze until ready to use.
