Ingredients

  • 2 large cloves garlic, minced
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. lemon juice
  • 1/4 cup olive or vegetable oil
  • 1 1/2 lb. skinless, boneless turkey breasts
  • 12 large mushrooms
  • 12 cherry tomatoes
  • 1 large lemon, cut into wedges
  • 2 small zucchini, cut into 1-inch pieces

Instructions

  1. Preheat broiler.
  2. In a blender, combine garlic, Dijon mustard, lemon juice, and oil; blend thoroughly.
  3. Cut turkey into 1 1/2-inch cubes and place in a bowl with the mustard mixture; marinate for about 10 minutes.
  4. Thread the marinated turkey, mushrooms, cherry tomatoes, zucchini pieces, and lemon wedges onto skewers.
  5. Place the skewers under the broiler and cook until the turkey is cooked through and vegetables are tender, about 10 minutes.
