Ingredients

  • 1/4 cup butter
  • 1 cup diced green bell pepper
  • 1 cup sliced mushrooms (about 4 oz.)
  • 1 large tomatoes, cubed (about 1-1/4 cups)
  • 1 cup uncooked long-grain rice or 1 cup uncooked whole grain rice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (10 1/2 ounce) can condensed chicken broth
  • 3/4 cup water

Instructions

  1. In a medium-sized saucepan, melt the butter over medium-high heat. Add the green pepper and mushrooms and saute for 5 minutes. Add the remaining ingredients, stirring until blended. Bring to a boil, then reduce the heat to low. Simmer, covered, for 30 minutes or until all the liquid has evaporated.
