Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon fennel seed
  • 2 3/4 pounds turnips, peeled
  • 2 medium carrots, peeled

Instructions

  1. Mix mayonnaise, rice vinegar, sugar, and fennel seed in a large bowl.
  2. Using a processor fitted with a grating disk, grate the turnips.
  3. Transfer the grated turnips to the bowl with the dressing.
  4. Grate the carrots and onion.
  5. Add the grated carrots and onion to the bowl with the dressing and toss to coat.
  6. Season with salt and pepper to taste.
  7. Cover and chill for 30 minutes before serving.
