Ingredients

  • 1 garlic clove
  • 1/2 small onion
  • 1/4 cup parsley leaves
  • 1 (15 to 19 oz.) can white kidney beans, drained
  • 2 Tbsp. lemon juice
  • 1/2 tsp. pepper
  • 1/2 tsp. salt
  • 1 (4 oz.) jar diced pimentos, drained

Instructions

  1. In a food processor, process garlic, onion, and parsley until finely chopped.
  2. Add beans, lemon juice, pepper, and salt.
  3. Process until smooth.
  4. Stir in diced pimentos.
  5. Refrigerate if not serving immediately.
  6. Serve with crackers, pita slices, toasted bread, or vegetables.
