Tuscan Bruschetta

- Cut baguettes into 1/4 inch slices diagonally.
- Lightly brush bread with 2 tablespoons of the olive oil and toast under broiler or over hot coals. Set aside.
- Combine olives, 6 whole garlic cloves, capers, lemon juice, oil and pepper in a food processor or blender.
- Process until finely chopped. Spread a thin layer of olive mixture on each piece of bread.
- Garnish with sliced cherry tomatoes and parsley, if desired.
- Serves 24.
