Tuscan Bruschetta

Ingredients

  • 2 baguettes
  • 6 garlic cloves
  • 4 Tbsp. olive oil + 2 Tbsp. olive oil
  • 1 (6 oz.) can extra large pitted ripe olives
  • 3 Tbsp. capers, rinsed
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. freshly ground black pepper

Instructions

  1. Cut baguettes into 1/4 inch slices diagonally.
  2. Lightly brush bread with 2 tablespoons of the olive oil and toast under broiler or over hot coals. Set aside.
  3. Combine olives, 6 whole garlic cloves, capers, lemon juice, oil and pepper in a food processor or blender.
  4. Process until finely chopped. Spread a thin layer of olive mixture on each piece of bread.
  5. Garnish with sliced cherry tomatoes and parsley, if desired.
  6. Serves 24.
