Ingredients

  • 1 broiler fryer (3 to 4 lb.)
  • 1 large bunch parsley, chopped
  • Juice of 1 lemon
  • 2 to 3 Tbsp. olive oil
  • Salt to taste
  • Pepper to taste
  • Vegetable oil

Instructions

  1. Cut the chicken into equal-sized pieces.
  2. Put the chicken into a casserole dish and sprinkle with chopped parsley and lemon juice.
  3. Pour olive oil over the chicken and season with salt and pepper.
  4. Turn the chicken in the marinade to coat evenly and let stand in the refrigerator for about 2 hours.
