Ingredients

  • 3 lb. potatoes
  • 3/4 c. light cream
  • 1 tsp. sugar
  • 1/2 c. butter
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped chives
  • 1 1/2 tsp. dried dill
  • 1 pkg. frozen chopped spinach

Instructions

  1. Boil and mash the potatoes.
  2. Add the heated light cream, sugar, melted butter, salt, and pepper, then beat well.
  3. Stir in the chopped chives and dried dill.
  4. Add the cooked, drained spinach and beat well again.
  5. Transfer the mixture into a buttered 1 1/2-quart casserole dish.
  6. Bake at 400°F (200°C) for about 20 minutes until golden on top.
