Ultimate Onion

- Mix cornstarch, flour, garlic salt, paprika, salt, and pepper until well blended.
- Add beer to the dry mixture and stir until smooth.
- Cut about 3/4 inch off the top of the onion and peel it.
- Cut the onion into 12 to 16 vertical wedges, ensuring not to cut through the root end.
- Remove about 1 inch of petals from the center of the onion.
- Dip the onion in seasoned flour, shake off excess, then dip in batter, allowing excess to drip off.
- Separate the petals to coat thoroughly with batter.
- Let the batter stand briefly to blend ingredients.
- Gently place the battered onion in a fryer basket and deep fry at 375° to 400°F for 1 1/2 minutes.
- Turn the onion over and fry for an additional 1 to 1 1/2 minutes or until golden brown.
- Drain on paper towels.
- Place the onion upright in a shallow bowl and remove the center core with a circular cutter or apple corer.
- Serve hot with Creamy Chili Sauce.
