Ingredients

  • 3/4 cup cornstarch
  • 3/8 cup flour
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 ounces beer
  • 1 to 2 jumbo Vidalia onions (4-inch diameter or larger)
  • Seasoned Flour as needed (recipe follows)

Instructions

  1. Mix cornstarch, flour, garlic salt, paprika, salt, and pepper until well blended.
  2. Add beer to the dry mixture and stir until smooth.
  3. Cut about 3/4 inch off the top of the onion and peel it.
  4. Cut the onion into 12 to 16 vertical wedges, ensuring not to cut through the root end.
  5. Remove about 1 inch of petals from the center of the onion.
  6. Dip the onion in seasoned flour, shake off excess, then dip in batter, allowing excess to drip off.
  7. Separate the petals to coat thoroughly with batter.
  8. Let the batter stand briefly to blend ingredients.
  9. Gently place the battered onion in a fryer basket and deep fry at 375° to 400°F for 1 1/2 minutes.
  10. Turn the onion over and fry for an additional 1 to 1 1/2 minutes or until golden brown.
  11. Drain on paper towels.
  12. Place the onion upright in a shallow bowl and remove the center core with a circular cutter or apple corer.
  13. Serve hot with Creamy Chili Sauce.
