Ingredients

  • 15 oz. can of salmon
  • 1 egg
  • 1 heaping Tbsp. baking powder
  • 1/2 cup sifted flour

Instructions

  1. Pour the juice off the can of salmon and set the salmon aside.
  2. Use a fork to mix the salmon and egg well.
  3. Add the sifted flour to the mixture and mix thoroughly.
  4. Mix 1/4 of the salmon juice with the baking powder.
  5. Beat the mixture with a fork until it foams; if it doesn't foam, the baking powder may be old.
  6. Blend the foaming mixture into the salmon mixture.
  7. Drop teaspoonfuls of the mixture into a deep fryer filled half full with oil.
  8. Cook until the bites rise to the top and are golden brown.
  9. Drain on paper towels before serving.
