Upside-Down Onion Cornbread

Ingredients

  • 1 medium sweet onion
  • 2 Tbsp. butter or margarine
  • 1 1/2 c. all-purpose flour
  • 3/4 c. cornmeal
  • 1 Tbsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 c. milk
  • 1/3 c. vegetable oil
  • 1 egg

Instructions

  1. Peel onion; cut 6 very thin slices from center of onion. Finely chop remaining onion; set aside.
  2. Melt butter in a 9-inch ovenproof skillet over medium heat.
  3. Arrange onion slices over bottom. Cook 2 to 3 minutes or until onion is partially cooked.
