Ingredients

  • 4 medium cucumbers
  • 1 medium onion
  • 1/4 cup cider vinegar
  • 2 tablespoons water
  • 1 teaspoon sugar
  • 1/2 teaspoon freshly ground pepper

Instructions

  1. Peel cucumbers and seed, if necessary.
  2. Thinly slice cucumbers and onions.
  3. Combine cider vinegar, water, sugar, salt, and pepper in a large bowl.
  4. Add cucumbers and onions; toss well to coat.
  5. Refrigerate, covered, for 2 to 3 hours.
  6. Before serving, toss again and transfer salad to a serving plate, saving the marinade for storing leftovers.
