Ingredients

  • 2 cups whole-wheat flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

  • 1 1/2 cups cooked, mashed yams or sweet potatoes
  • 1/2 cup water
  • 1/2 cup raisins

Instructions

  1. Spray muffin pans with vegetable oil.
  2. Preheat oven to 375°F (190°C).
  3. In a large bowl, combine whole-wheat flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  4. Add mashed yams or sweet potatoes, water, and raisins to the dry ingredients.
