Ingredients

  • 18 to 20 lb. tomatoes
  • 1/4 cup chopped onion
  • 2 cups chopped celery
  • 1 cup chopped carrots
  • 1/3 cup sugar
  • 3 tablespoons canning salt

Instructions

  1. Cut up tomatoes and place in a 12-quart kettle; heat until hot.
  2. Gradually add chopped vegetables, maintaining a boil.
  3. Add sugar, salt, and spices.
  4. Simmer uncovered for 20 minutes.
  5. Put the mixture through a food mill.
  6. Pour hot juice into hot jars, leaving 1/2-inch headspace.
  7. Adjust lids and process in a pressure canner at 5 pounds for 15 minutes for pints or 20 minutes for quarts.
