V-8 Vegetable Juice

Ingredients

  • 10 qt. tomatoes
  • 1/2 c. salt
  • 1 hot pepper (optional)
  • 1 1/2 c. celery
  • 5 large onions
  • 4 sweet peppers
  • 5 c. water
  • 1/2 c. vinegar
  • 1 c. sugar

Instructions

  1. Cook tomatoes
  2. in their own juice and run through sieve to remove
  3. peel
  4. and
  5. seeds.
  6. Cook together the celery, onions and peppers in the 5 cups water until tender, then run through blender.
  7. Add
  8. salt,
  9. vinegar,
  10. sugar,
  11. vegetable
  12. mixture
  13. to tomatoes and
  14. mix
  15. well.
  16. Bring to a rolling boil and put into sterilized jars and seal while hot.
  17. Yields 9 quarts.
