Ingredients

  • 16 oz. yellow split peas
  • 1 large onion
  • 1 sweet pepper
  • 2 green hot peppers
  • 3 bay leaves
  • 1 tsp. salt
  • 1 qt. cooking oil
  • 1/2 tsp. crushed red pepper

Instructions

  1. Soak the yellow split peas in warm water for 2 to 3 hours. Chop the onion and peppers into tiny pieces.
  2. Crush the bay leaves.
  3. Drain the peas and grind them in the blender without adding water to form a coarse paste.
  4. Mix salt, onion, sweet pepper, hot peppers, crushed bay leaves, crushed red pepper (if desired), and the paste thoroughly.
  5. Shape the mixture into 1-inch diameter balls and flatten them.
  6. Heat the cooking oil for deep frying. Fry the flattened balls until golden brown.
  7. Remove the Vadas and spread on paper towels to drain excess oil.

Tips & Substitutions

For a crispier texture, ensure the oil is hot enough before frying the Vadas; a test is to drop a small piece of batter into the oil—if it sizzles immediately, it's ready. You can substitute yellow split peas with lentils for a slightly different flavor. If you prefer less heat, reduce the number of hot peppers or omit the crushed red pepper.

Serving Suggestions

Serve Vadas hot, accompanied by a spicy chutney or a cooling yogurt dip for balance. They pair beautifully with Curry Dip For Fresh Vegetables, adding variety to your appetizer spread. Consider serving them alongside a refreshing salad or Indian relish for a complete meal.

Storage & Reheating

Store leftover Vadas in an airtight container in the refrigerator for up to three days. To reheat, place them in an oven at 350°F (175°C) for about 10 minutes to restore their crispiness. Avoid microwaving, as this can make them soggy.
