Ingredients

  • 8 cups sliced squash
  • 1 cup sliced onions
  • 3 large bell peppers, chopped
  • 3/4 cup salt
  • 2 cups vinegar
  • 1 teaspoon mustard seed
  • 1 teaspoon celery seed

Instructions

  1. Sprinkle salt over the sliced squash, onions, and chopped bell peppers, then cover with ice water.
  2. Place a few ice cubes on top of the vegetables.
  3. Let sit for 1 hour to draw out moisture.
  4. Drain the vegetables thoroughly before using.
