Ingredients

  • 3 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1 c. milk
  • 1 egg yolk, beaten
  • 1 tsp. vanilla
  • 1/2 c. heavy cream

Instructions

  1. Combine sugar and cornstarch in a saucepan, add milk.
  2. Cook and stir over medium heat until thick.
  3. Beat a small amount of the hot mixture into the beaten egg yolk, then stir it back into the saucepan.
  4. Cook and stir for 1 minute.
  5. Remove from heat, add vanilla, and cool.
  6. Whip heavy cream and fold into the cooled pudding.
