Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • pinch of salt
  • 1 cup hazelnuts, coarsely chopped
  • 1 egg white, lightly beaten

Instructions

  1. Preheat oven to 350°F; lightly butter and flour a large baking sheet.
  2. In a medium bowl, beat eggs with a fork until foamy.
  3. Add vanilla to the eggs and mix well.
  4. Slowly add sugar and salt, mixing with a fork until blended.
  5. Stir in coarsely chopped hazelnuts.
  6. Divide the dough in half and shape each into a log on the prepared baking sheet.
  7. Brush the logs with the lightly beaten egg white.
  8. Bake for about 25 minutes or until golden brown.
  9. Remove from oven and let cool slightly.
  10. Slice into diagonal pieces and bake for an additional 10-15 minutes until crisp.
