Ingredients

  • 1 pkg. vanilla wafers
  • 1 lb. pecans
  • 1/2 lb. candied cherries
  • 1/2 lb. candied pineapple
  • 1/4 lb. raisins
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 can evaporated milk
  • 1/8 teaspoon salt

Instructions

  1. Crush vanilla wafers, chop candied cherries, candied pineapple, and pecans, reserving 4 cherries, 16 pecan halves, and 2 slices pineapple for decoration.
  2. Mix the chopped fruit, nuts, and wafer crumbs together in a bowl.
  3. Beat eggs in a separate bowl, then add sugar and evaporated milk, mixing well.
  4. Combine the egg mixture with the fruit, nut, and wafer mixture.
  5. Mix all ingredients thoroughly until well combined.
  6. Let the mixture stand while preparing a pan lined with waxed paper.
  7. Pack the mixture into the prepared pan and decorate the top with the reserved fruit and nuts.
  8. Bake at 325°F (160°C) for one hour.
  9. Remove the cake from the pan and let it cool.
  10. Store the cake in a tight container.
