Vanilla Wafer Roll

Ingredients

  • 1 pkg. Knox gelatine
  • 1 c. sugar
  • 6 eggs, divided
  • 1 small can crushed pineapple
  • 1 c. chopped nuts
  • 1 lb. vanilla wafers

Instructions

  1. Soak gelatine in 1/2 cup cold water; add to beaten egg yolks and sugar.
  2. Cook in double boiler until thick and smooth; cool. Add pineapple and nuts.
  3. Fold in stiffly beaten egg whites.
  4. Crush wafers with rolling pin.
  5. Place a layer of crumbs in a well-greased loaf pan.
  6. Pour over a layer of filling.
  7. Repeat, making 5 layers.
  8. Let stand overnight in refrigerator.
  9. Serves 12.
