Veal "Mock Turtle" Soup

Ingredients

  • 2 lb. veal
  • 6 medium potatoes
  • 1 bunch carrots
  • 1 bunch celery
  • 1 large can tomatoes
  • 1 small box pickling spices
  • 2 lemons
  • 2 hard-boiled eggs
  • 2 c. flour

Instructions

  1. Put pickling spices in a small cheesecloth bag.
  2. Cook veal in a kettle of water with the pickling spices until tender.
  3. Once cooked, grind the veal with a meat grinder.
  4. While the veal is cooking, peel and dice the potatoes, carrots, and celery very finely.
  5. Add the diced vegetables to the cooked veal and broth and continue cooking.
  6. Brown the flour in a skillet, stirring constantly.
  7. When the vegetables are cooked, add the diced lemons and hard-boiled eggs to the soup.
  8. Gradually add water to the browned flour to create a thin, smooth paste.
  9. Stir the browned flour paste into the soup slowly, mixing thoroughly.
  10. Add the can of tomatoes, including the liquid, to the soup.
  11. Serve the hot soup with Ritz crackers.
