Veal Roll-Ups

Ingredients

  • 4 slices deli ham
  • 4 slices Swiss cheese
  • 1 lb. veal round steak, cut into 4 pieces and pounded very thin (butcher will do this if asked)
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1/4 tsp. allspice
  • 1 egg, beaten
  • 1/2 c. bread crumbs
  • 2 Tbsp. shortening
  • 1/2 c. white wine

Instructions

  1. Place one slice of ham and Swiss cheese on each piece of veal steak.
  2. Roll up carefully, beginning at narrow end.
  3. Secure rolls with toothpicks.
  4. Mix flour and seasonings.
  5. Dust veal with seasoned flour.
  6. Dip floured rolls into beaten egg.
  7. Coat with bread crumbs.
  8. Brown in hot shortening.
  9. Pour wine over meat. Cover and simmer for 55 minutes.
  10. Uncover and simmer 5 minutes longer.
  11. Serve with pasta or rice.
  12. Serves 4.
