Ingredients

  • 1 lb. fresh or frozen fish fillets
  • 3 Tbsp. lemon juice
  • 1/2 tsp. paprika
  • 1/2 cup fresh mushrooms, sliced
  • 1/4 cup chopped tomato
  • 1/4 cup chopped green pepper
  • 1 Tbsp. chopped fresh parsley
  • pepper to taste
  • lemon wedges

Instructions

  1. If fish is frozen, thaw it.
  2. Cut fish into 4 portions and place in a non-stick sprayed baking dish.
  3. Sprinkle with lemon juice and paprika.
  4. Combine sliced mushrooms, chopped tomato, chopped green pepper, chopped parsley, and pepper.
  5. Spread the vegetable mixture over the fish portions.
  6. Cover and bake at 350°F for 25 minutes.
  7. Serve with lemon wedges.
