Vegetable Gumbo Recipe

Ingredients

  • 1 pkg. (16 ounce.) vegetable gumbo mix
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 can stewed Italian tomatoes
  • Salt and pepper to taste
  • Dash of cayenne
  • 1/4 c. water

Instructions

  1. Saute/fry onions and garlic in 1/4 c. water.
  2. Add in tomatoes, vegetable mix and 1/2 tomato can of water.
  3. Simmer till tender.
  4. Serving suggestions: serve on a bed of rice, or possibly add in cooked macaroni to mix and serve with a salad and garlic toast.
