Ingredients

  • 12 oz. uncooked mostaccioli
  • 2 c. broccoli florets
  • 2 c. cauliflower florets
  • 1 c. sliced carrots
  • 1 c. shredded Mozzarella cheese
  • 1 c. shredded Monterey Jack cheese
  • 1 c. Fontina cheese, shredded
  • 1/3 c. grated Parmesan cheese
  • 3 Tbsp. margarine, melted

Instructions

  1. Cook the pasta according to the package directions.
  2. Add the broccoli, cauliflower, and sliced carrots during the last 2 minutes of cooking.
  3. Drain the pasta and vegetables.
  4. Gently toss the mixture in a large bowl with shredded Mozzarella, Monterey Jack, and Fontina cheeses, 2 1/2 tablespoons of Parmesan cheese, and melted margarine.
