Vegetable Pita Melt

A vibrant vegetable-packed pita melt featuring fresh broccoli, cauliflower, tomatoes, green onions, and melted cheddar cheese, perfect for a quick, flavorful, vegetarian meal or snack.

Ingredients

  • 1 bunch fresh broccoli
  • 1 bunch fresh cauliflower
  • 3 green onions
  • 2 medium tomatoes
  • shredded Cheddar cheese
  • pita bread
  • Good Seasons Ranch dressing

Instructions

  1. Bring 2 quarts of water to a rapid boil in a large pot.
  2. Cut broccoli and cauliflower into bite-sized pieces.
  3. Place cauliflower and broccoli into the boiling water and cook for 4 minutes.
  4. Drain in a colander and let cool.
  5. In a large bowl, combine the cooled vegetables with chopped green onions and chopped tomatoes.
  6. Pour Ranch dressing over the mixture until well coated.
  7. Chop the remaining tomato and place on top of the mixture for decoration.
  8. Chill the vegetable salad for 2 hours.
  9. Cut pita bread in half and fill each pita with the vegetable salad.
  10. Top with shredded Cheddar cheese.
  11. Microwave the filled pitas to melt the cheese before serving.
