Vegetable Pita Melt
A vibrant vegetable-packed pita melt featuring fresh broccoli, cauliflower, tomatoes, green onions, and melted cheddar cheese, perfect for a quick, flavorful, vegetarian meal or snack.

- Bring 2 quarts of water to a rapid boil in a large pot.
- Cut broccoli and cauliflower into bite-sized pieces.
- Place cauliflower and broccoli into the boiling water and cook for 4 minutes.
- Drain in a colander and let cool.
- In a large bowl, combine the cooled vegetables with chopped green onions and chopped tomatoes.
- Pour Ranch dressing over the mixture until well coated.
- Chop the remaining tomato and place on top of the mixture for decoration.
- Chill the vegetable salad for 2 hours.
- Cut pita bread in half and fill each pita with the vegetable salad.
- Top with shredded Cheddar cheese.
- Microwave the filled pitas to melt the cheese before serving.
