Vegetarian'S Chicken Soup

Ingredients

  • 5-6 cups vegetable stock
  • 2 leeks chopped coarsely
  • one large vidalia onion
  • one bag of brown rice spirals
  • chopped carrots
  • 1-2 cans of white beans
  • chopped potatos
  • 1/4 c. of white wine
  • 1 tsp crushed sage
  • 1 tsp thyme
  • 2 tsp minced garlic
  • 1 bay leaf
  • 1/4 c. of lentils

Instructions

  1. place carrots, lentils, and potatos in broth. boil for 25 minutes. Add remaining ingredients. Boil for 15-20 more minutes or until lentils and carrots are soft.
  2. Serve with a crusty bread. I suggest ciabatta or crusty italian bread.
