Ingredients

  • 1 (3 oz.) pkg. lemon gelatin
  • 1/2 c. boiling water
  • 1 c. mayonnaise
  • 1 pt. cottage cheese, beaten until smooth
  • 2 Tbsp. lemon juice
  • pinch of salt
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1/2 cucumber, chopped and drained

Instructions

  1. Dissolve gelatin in boiling water; let cool a few minutes, then blend into the cheese.
  2. Add mayo and seasonings, beating until smooth.
  3. Add green pepper, onion and cucumber.
  4. Spoon into an oiled mold and chill.
  5. Excellent with ham.
