Ingredients

  • 2 slices sourdough French bread

  • 2 slices ripe tomato
  • 1/4 zucchini
  • 2 thin slices onion (optional)
  • leaf lettuce
  • sliced cucumbers (optional)

Instructions

  1. Spread one slice of sourdough bread with fat-free mayonnaise and Dijon mustard.
  2. Layer the slices of tomato, zucchini, onion (if using), cucumbers (if using), and leaf lettuce on the bread.
  3. Top with the second slice of sourdough bread to complete the sandwich.
