Veggie Taco Shells
Ingredients
- None None FOR THE SALSA ⓘ
- 3 None tomatoes, finely chopped ⓘ
- 1 small red onion, finely chopped
- 2 tbsp chopped cilantro ⓘ
- None None FOR THE GUACAMOLE ⓘ
- 2 medium avocados, peeled and pitted ⓘ
- 1 tbsp lemon juice ⓘ
- 1/2 tsp mild chili powder ⓘ
- None None FOR THE TACOS ⓘ
- 8 None taco shells ⓘ
- 1 can (16 oz) refried beans, heated ⓘ
- 2/3 cup grated Cheddar cheese
Instructions
- Mix the salsa ingredients in a small bowl. Season generously with salt and freshly ground black pepper. Set aside until required.
- For the guacamole, mash the avocado with the lemon juice, chili powder, salt and freshly ground black pepper, until almost smooth and creamy. Transfer to a small serving bowl. Cover with plastic wrap and set aside.
- Fill taco shells with refried beans, salsa, guacamole and grated Cheddar cheese.
